Colorful Flavors of Asia in a Jar

The fragrant and colorful stir-fry features the flavors of Asia.

Meal prepping ain’t easy!! If you’re like me, I’m not ordinary or basic, so I don’t like simple things, especially when it comes to my food. I’ve been a lifestyle change for the last couple months and it’s going quite well. However, being the creative genius I am the thought chicken breast and steamed asparagus on a daily basis is blah.  This week I decided to create some simple suppers that will satisfy your palate.

The Asian Salad has it all!!!

This Asian Salad in a Jar is a protein powerhouse with both chicken and steamed edamame piled onto a crunchy bed of shredded carrots and cabbage and toppings that add tons of flavor without all the calories. You can make it ahead for a quick, easy, and healthy lunch on the go!

Asian Chicken Salad in a Jar

Meat

  • 3 oz Chicken

Produce

  • 1/4 cup Carrots
  • 2 oz Edamame
  • 2 tbsp Scallions
  • 1 1/2 cups Tri-color slaw or shredded cabbage

Condiments

  • 2 tbsp Sesame ginger dressing, Light

Pasta & Grains

  • 1/8 cup Chow mein noodles

Baking & Spices

  • 2 tbsp Red peppers, roasted

Nuts & Seeds

  • 1 tbsp Almonds

Other

  • ¼ cup mandarin orange segments (fresh or no-suger-added)
  • Layer 1/4 cup carrots, 1 1/2 cabbage , 2 oz of edamame , 1 tbsp almonds, 2 tbsp scallions, 1/2 cup chow mein /noodles,2 tbsp red peppers,  1/2 cup chicken,.
  • 2 tbsp  of sesame dressing . Chill salads and dressing, covered, until ready to serve.
